As summer fades away, I find myself still grasping for the flavors of the season. Luckily, we still have a few warm, sunny days left. Savor the taste of summer with this delicious strawberry lemon butter. It is perfect melted on pancakes! How would you eat strawberry lemon butter?
1/2 c. butter
2 tbsp. fresh strawberries, diced
1 tsp. powdered sugar
1/2 tsp. lemon juice
Hull and dice the strawberries. Mix the diced strawberries, powdered sugar and lemon juice into the butter. Once mixed, pack the butter into a ramekin and let cool for approximately 30 minutes prior to serving. Alternatively, you can roll into a log using plastic wrap.
