Back in June, Alton Brown published a recipe for Avocado Butter on his blog. I initially hesitated to try it, but after seeing it all over Twitter and blogs, I knew I had to. Thank goodness for Alton Brown because I never would have come up with this combination. In this version, I opted for lime zest instead of lemon juice and left out the cumin. It was simple and refreshing – a must-try for any avocado lover!


Avocado Butter
Ingredients for Avocado Butter

 

1/2 c. butter
8 tbsp. avocado (about one large avocado)
2 tbsp. lime zest
2 tsp. chopped cilantro
a pinch of sea salt

 

Finely chop the cilantro, set aside. De-pit the avocado and scoop out the insides. Chop the avocado into small pieces. Next, thoroughly mix the chopped cilantro, avocado and lime zest into the butter. Pack the butter into a ramekin or shape into a log using plastic wrap. Let it chill in the refrigerator for approximately 30 minutes prior to serving.
